BASICS OF BREWING
Importance of Grind Size
In pour over brewing, grind size directly controls how fast water flows through the coffee bed and paper filter. A medium-fine grind strikes the right balance — it slows the flow enough for thorough extraction while still letting the brew drip through in 3-4 minutes.
Grind too fine and the coffee bed becomes dense, causing the water to stall. This leads to over-extraction, bitterness, and an agonizingly slow drawdown. Go too coarse and water rushes straight through without absorbing enough flavor, leaving you with a sour, thin cup that tastes under-developed.
Aim for a texture between table salt and sand. With the right grind, pour over rewards you with a clean, bright cup that highlights the unique origin characteristics of your beans — the clarity and complexity that make this method a favorite among specialty coffee lovers.
