Traditional South Indian filter coffee creates a strong, aromatic decoction mixed with hot milk and sugar for an authentic, comforting beverage.

What You'll Need

Equipment

  • Indian Coffee Filter
  • Tumbler and Dabara (optional)
  • Saucepan for milk

Ingredients

  • Coffee: 2-3 tbsp dark roasted powder (80:20 coffee:chicory)
  • Boiling Water
  • Milk
  • Sugar to taste

Brewing Process

Add Coffee

Add coffee powder to upper chamber of filter.

Press Down

Press down gently with the presser disc.

Add Water

Pour boiling water over the powder and cover.

Let It Drip

Let drip for 8-10 minutes. Longer = stronger decoction.

Heat Milk

Heat milk until just before boiling.

Mix & Serve

Mix 1-2 tbsp decoction with hot milk. Add sugar. Pour between tumbler and dabara for froth.

Tips for Best Results

  • Use chicory blend (80:20) for authentic South Indian taste.
  • Store decoction in refrigerator for up to 2 days.
  • Clean filter with warm water only - no soap.

Importance of Grind Size

The South Indian filter relies on gravity alone to pull water through the coffee — no pressure, no paper filter, just a perforated metal disc. A fine grind is essential because it creates the resistance needed to slow that gravity drip to the ideal 8-10 minutes, ensuring a rich, concentrated decoction.

If the grind is too coarse, water drips through in just minutes, producing a weak decoction that cannot stand up to the hot milk it is meant to be mixed with. Too fine, and the water barely passes through at all, stalling the drip and creating an overly bitter, harsh concentrate.

The traditional 80:20 coffee-to-chicory blend requires a consistently fine grind so both components extract together evenly. This produces the distinctively bold, slightly sweet, and aromatic decoction that defines authentic South Indian filter coffee.
