Overview

Frozen Cherry processing begins with whole cherries harvested at peak ripeness, then frozen so sugars accumulate. After slow drying on raised beds and medium roasting, this lot presents strong fruit clarity and sweetness with mild acidity. The technique enhances fruit character while preserving coffee structure. A unique sensory experience for adventurous specialty drinkers.

Origin Story

The Baarbara Estate in Chikkamagaluru has high altitude (4500–5000 ft) and shade-grown conditions conducive to fruit-forward coffee lots. The frozen cherry process intensifies fruit sweetness and is inspired by wine fermentation techniques adapted for coffee.

Producer Story

Sourced from Baarbara Estate, producers implement an innovative frozen cherry fermentation: freshly harvested cherries are fermented, frozen to concentrate sugars, then dried before roasting. This labor-intensive method amplifies sweetness and produces distinct fruit aromatics rarely found in conventional processing.

The method takes inspiration from ingredients outside of coffee which develop amazing natural sweetness thanks to freezing temperatures. Inspired by the wine industry, whole cherries are fermented and put in a freezer in bags so the sugars accumulate. Further removed and slow dried on raised beds.

THE ORIGIN

Experimental Frozen Cherry Process

Frozen Cherry coffee represents an experimental processing method inspired by techniques used in winemaking. Fully ripe coffee cherries are fermented and then frozen, concentrating sugars and intensifying fruit compounds before drying. This controlled process amplifies sweetness and enhances vibrant fruit aromatics in the final cup. Grown in the highlands of Chikkamagaluru, the Arabica beans benefit from cool mountain conditions and shade cultivation. The result is a strikingly expressive coffee with bright berry notes, tropical fruit sweetness and lively acidity. This innovative approach showcases the creativity and evolving craftsmanship within modern specialty coffee processing.
