The Baarbara Estate in Chikkamagaluru has high altitude (4500–5000 ft) and shade-grown conditions conducive to fruit-forward coffee lots. The frozen cherry process intensifies fruit sweetness and is inspired by wine fermentation techniques adapted for coffee.

Sourced from Baarbara Estate, producers implement an innovative frozen cherry fermentation: freshly harvested cherries are fermented, frozen to concentrate sugars, then dried before roasting. This labor-intensive method amplifies sweetness and produces distinct fruit aromatics rarely found in conventional processing.
The method takes inspiration from ingredients outside of coffee which develop amazing natural sweetness thanks to freezing temperatures. Inspired by the wine industry, whole cherries are fermented and put in a freezer in bags so the sugars accumulate. Further removed and slow dried on raised beds.
